It’s so good; it’s not overly sweet, does not contain HFCS and delivers 8 essential nutrients. Plus, it tastes like creamsicles! And that’s what this Eye of Newt Salad tastes like, too.  This delicious fruit salad with fun colored tapioca “newt eyes” is a great recipe for your upcoming Halloween party!

Start with your tapioca. Soak 1 C tapioca pearls in 4 cups of water overnight, or at least 5 hours. To color it, add about 5 drops of food coloring. When you drain it in the morning, it will be a ghoulish shade of green!

Put your tapioca in the fridge and chill while you are preparing your other ingredients.  Slowly whisk 2 cups of TruMoo Orange Scream into your pudding mix. Let it thicken in the fridge for 5 minutes.

Whip and sweeten your cream and fold 1/2 C into your set pudding. Gently fold all the fruit into the pudding and whipped cream.

Once it’s mixed together, add the chilled tapioca and stir gently. If you are making in advance, keep the tapioca and pudding mixture separate until you are ready to serve it. The color of the tapioca will turn the pudding greenish if it sits very long!
