Sweet Potato Fries with BBQ Ranch Dipping Sauce

My toddler has recently started to refuse vegetables. It drives me nuts! I am, by nature, a huge worrier, so I can't help but worry about his health. We drink green smoothies fairly often, so I can sneak vegetables in that way, but I really want him to love vegetables. One vegetable he is always game for though, is a sweet potato. They sell these beautiful white-fleshed sweet potatoes as my local WinCo grocery store, and I buy about 5 pounds every time I go grocery shopping! Today, I wanted to share my favorite sweet potato recipe, Sweet Potato Fries. It's a recipe that you can pretty much find anywhere, but what really makes these awesome is the delicious dipping sauce.


Sweet Potato Fries:

3-4 sweet potatoes
1/2 T butter, melted
paprika
garlic powder
salt and pepper


Preheat your oven to 400*. Peel your sweet potatoes, and cut them up into wedges. I like to cut them kinda thick, not thin like french fries. Once they are all cut, put them in a large bowl and toss them in the melted butter. I have tried them tossed in olive oil, which is good, but something about using real butter is just SO good. Next, add some paprika and toss to coat. I didn't include an amount for the paprika because I just added enough to season all of them. After it's mixed, lay them flat on a baking sheet and sprinkle them with garlic powder, salt and pepper. Bake for 20-30 minutes, depending on thickness, or until they are tender. Turn them about half-way through the cooking time. 

Dipping sauce:

Regular or Light Ranch Dressing  ( I like Light Hidden Valley)
Sweet BBQ sauce( I used Famous Dave's Sweet and Zesty)

Mix equal parts of the Ranch and BBQ sauce together. Enjoy!
